Day 22 (11:00pm)
Roughly 10 minutes before the 3 hours were up I preheated my oven at 500 °F and placed a dutch oven (with the lid) in the oven. I then dusted the surface of the loaf with rice flour. I then waited for my oven to preheat and removed my pot and lid. I then carefully…
Day 22 (8:00pm)
I came back to check on my ball of dough (30 min later) and it was a bit more flat. For my final form, I flipped it over and folded over each side (four times). I was able to stretch out each side of my dough without ripping it. I them placed a kitchen towel…
Day 22 (7:30pm)
Finally! After 4 long hours I carefully transferred my dough to a floured counter. I then attempted to form a nice ball shape. It took my a couple of minutes to do this but I think I did okay… I will now leave my ball of dough out in the open for 30 minutes.
DAY 22(3:00pm)
I will now combine ½ a cup of my leaven, 1 ½ cups of lukewarm water, 3½ cups of bread flour, ⅓ of a cup of whole wheat flour in a large clear bowl. Now I can mix and mix! I will let it sit for 30 minutes.. DAY 22 (3:30pm) After 30 minutes, I…
Day 22!
Today I will be baking the bread! YAY!! So I checked up on my leaven and it had risen, and consisted of gas bubbles! I then decided to try the float test, I filled a glass of water and transferred a 1/2 of a teaspoon of my leaven (from the bottom of the culture). It…
Day 21
I will be baking my sourdough bread tomorrow (Finally!!). But today I will be making my leaven. To make my leaven I will be transferring 1 tablespoon of my culture into a clear bowl. I added 1⅔ of cups of flower mix and and ½ plus ⅓ cup of water! I then mixed it with…
Day 20
Today I decided to check my culture by the hour! I was able to check up on it four times today! 2:30 pm; I checked in and observed my culture. It looks rather the same as the past few days. I was only able to see two gas bubbles ( a sharp decrease). I will…
Day 17
For the next few days I will be doing the same steps (since day 5)! I have replenished my culture again and it still looks great! As before the amount of gas bubbles have slightly decreased and it is starting to feel a bit more sticky.
Day 15
I guess quarantine has made me even more lazy, I forgot to replenish my culture again. But thankfully the culture is forgiving, there were three gas bubbles present but I am able to continue!
Day 13
Even during quarantine I forgot to replenish my culture… Ooops, it still looked fine though! The amount of gas bubbles present has slightly decreased but there are still a couple present. I can continue the day 5 procedure!
Day 11
I forgot to check on my culture one day, but thankfully nothing weird happened. It is still going strong! Same results as the previous days, the top layer had gas bubbles and no funny smell. I will be continuing the day 5 procedure.
Day 9
I got the same results that I got from days 5-7. There were gas bubbles present! 🙂 The smell is no longer as awful as the first day. I am able to continue and will again transfer my culture to a small clear bowl and follow the same procedure.
Day 7
Like Day 5 my culture had a nice top (with no brown crust) and it again had formed gas bubbles! It also did not smell bad! I can follow the same steps as day 5!
Day 5
I checked my culture again. The smell was not as awful as the previous days! The top was not as dry as before, and there were gas bubbles present!! I then transferred a tea spoon of my bottom culture into a small clear bowl and added 2 tablespoons of my flour mix. I then added…
Day 4
I checked my culture and thankfully more bubbles formed! The top had a brown-ish crust and it smelled like rotten cheese. I transferred a tea spoon of the bottom culture to a fresh small bowl. I then added two table spoons of my flour mix! I mixed it with my bare hands and covered it…
Day 2/3
Checked my culture! Saw a couple of gas bubbles! I observed a color change, it turned a bit brown! The top also looked solid compared to the rest of the culture.
Day 1
Added 2 table spoons of flour mix into a small bowl! I added lukewarm water and mixed! Before I mixed it with my hands I washed my hands real quick. Covered it with a kitchen towel and placed in the kitchen corner to incubate.
Day 0
Mixed all purpose flour and wheat flour to make my mixture. Ingredients: 1 cup of all purpose flour, 1 cup of wheat flour and 1 large ziplock bag
