I will now combine ½ a cup of my leaven, 1 ½ cups of lukewarm water, 3½ cups of bread flour, ⅓ of a cup of whole wheat flour in a large clear bowl. Now I can mix and mix! I will let it sit for 30 minutes..

DAY 22 (3:30pm)
After 30 minutes, I went to check on my dough.I then added 3½ teaspoons of kosher salt, then mixed. I added 1/4 of a cup of water (it looked a little dry). Now for the next 4 hours I will be checking in every 30 minutes (to lift the bottom of the dough to the top).
