Day 22 (11:00pm)

Roughly 10 minutes before the 3 hours were up I preheated my oven at 500 °F and placed a dutch oven (with the lid) in the oven. I then dusted the surface of the loaf with rice flour. I then waited for my oven to preheat and removed my pot and lid. I then carefully transferred my dough to the pot. I attempted to slit an X in the middle, I struggled since I didn’t have a very sharp knife. This might have caused some minor issues. I then placed my lidded pot into my heated oven..

I then reduced the temperature to 450 °F and baked my dough for 20 minutes. After these 20 minutes I removed the lid and allowed it to bake for another 20 minutes.

20 minutes later…. I then carefully transferred my loaf out of the pot. My bread is finally done. I noticed that the top came out funny, I had a lot of trouble trying to slit the top before placing it in the oven.
